During a summer heatwave, it’s too hot to even thing about cooking. Instead, piece a meal together from your refrigerator and whir up a batch of cool, thirst-quenching agua fresca. If you’re feeling extra kicky, a shot of vodka is a fabulous addition.
3 cups chopped watermelon
3 cups water
3 tablespoons cane sugar
wedges of lime for serving
Combine the watermelon, water and sugar in a blender or food processor and blitz until pureed.
Place a fine mesh strainer over a pitcher and pour the mixture in. Using the back of a spoon, work the juice through until all that’s left is the spent pulp.
Serve over ice and garnish with lemon or lime wedges.
