Introducing The COOK Masters Program, A New Instructional Culinary Training Series Taught By Philadelphia’s Best Chefs

It warms our hearts to see communities in Philadelphia come together and generously give back to the people that make up the city’s diversely talented population.

And in an effort to enhance the presence of our city’s culinary craft, Audrey Taichman’s COOK along with a star-studded cast of professional chefs, who continue to raise the standards of Philly’s dining scene, are joining forces to launch the COOK Masters Program this January 2013.

An instructional cooking series taught by some of the industry’s best and influential, COOK Masters, with the help of Philadelphia magazine and Foobooz, will immerse ten students each semester in the art of cooking with as many as 20 hours of hands-on experience covering everything from advanced knife skills, pasta making and beverage pairing to kitchen and hospitality fundamentals.

Already on board to season the hands of Philadelphia’s future generation of chefs is an impressive lineup that includes Michael Solomonov, Jean-Marie Lacroix, Nick Elmi, Joe Cicala, Pierre Calmels and Jason Cichonski (to name a few).

All are welcome to apply – line cooks, culinary students, dishwashers, etc. – to take part in this tremendous opportunity with the only requirement being to possess a genuine passion to pursue a professional career in the restaurant industry.

Russet, Locally Sourced BYOB Set To Open In Rittenhouse Square, February 14th

Just in time for Valentine’s Day, Andrew and Kristin Wood will open Russet, a cozy and casual BYOB on the first floor of a lovely brick townhome, the former home of Ernesto’s Cafe, just steps from Rittenhouse Square.

We got a sneak peek at the restaurant, and from the warmth of the chefs to the intricacy of the personalized decor to the attention to detail with the food, Russet will be on permanent rotation in our dining schedules.

Check out some highlights:

The Food

The Woods will serve a daily-changing menu (six appetizers, six entrees) sourced from Green Meadow Farm, Erdenheim Farm and other local purveyors within 100 miles of the restaurant. Andrew will continue his focus on whole-animal butchery, while his wife and Pastry Chef Kristin will prepare desserts.

Before his time at Philadelphia’s Fork, Andrew was part of the opening teams of the highly-acclaimed James and Maia. Kristin was the pastry chef at James.

One of Andrew’s favorite dishes on the opening menu is the gorgonzola ravioli topped with salsa de noche, made with toasted local black walnuts, cream, garlic, milk and white vinegar. One of Kristin’s favorite desserts is the pine nut olive oil cake with sun-dried cherries poached in port and rosemary, topped with homemade vanilla ice cream.

Charcuterie is one of Andrew’s specialties — he spearheaded it while at Fork. We got a peek inside Russet’s charcuterie closet, and diners are in for a treat. All animals are brought in whole and the chef will use every single part; they recently prepared a 380 lb. pig and there was only 6 oz. of waste.

Russet will serve Counter Culture coffee, brewed in a refurbished 70-80-year old manual Italian espresso machine.

The Decor

When redecorating Russet’s dining room, the repurposed parlor of a late 1800s townhome, the Woods stayed green wherever possible, using zero-VOC paints and laying marmoleum floors made from 100% natural elements. The hostess stand is made from barn floorboards.

Brilliant landscape compositions by Philly artist Anthony DeMelas adorn one wall, and the tabletops, chairs, light fixtures and many of the room’s decorative accents are antiques (actual Woods vintage family photos!) or made from reclaimed materials.

Fun fact: The color scheme is food-focused, with chocolate brown wood, butter-colored walls, bacon-esque booth and chair fabric (yellow, white and brown).

Even the official logo is quite personal, based on Andrew’s drawing of Kristin’s grandparents’ apple tree.

Past the main dining room is space for private dining as well as an outdoor seating area, both of which will be opened by summer.

Russet will serve dinner Tuesday through Sunday from 5:30-10:30 p.m. Starting next weekend, brunch is served Saturday and Sunday from 10 a.m.-2 p.m. The restaurant is closed on Monday. Shortly after opening, lunch will be served three days a week.

Chef Guillermo Tellez brings globally influenced New American cuisine and a dedication to sustainability to  Philadelphia.

At the age of thirteen, Chef Guillermo Tellez moved from his home of Central Mexico to the US and began working in the kitchens of IHOP. Realizing his passion for cooking, Tellez attended culinary school and got the attention of famous restaurateur, Charlie Trotter. After spending time at a few of Trotter’s restaurants, Chef Tellez relocated to Philadelphia in 2007 to work with Starr Restaurants as Director of Menu Development and Executive Chef of the now-closed, Striped Bass.

Chef Tellez’s latest restaurant, Square 1682, is located at the Hotel Palomar in Center City. Square 1682’s cuisine is largely New American with pops of more worldly flavors.  Chef Tellez is wholly dedicated to providing first-rate service and a sustainable dining experience as evidenced by his direct sourcing of organic, locally grown produce to his energy efficient kitchen and dining room. Square 1682 is Philadelphia’s first LEED certified restaurant, nationally recognized by the US Green Building Council as an Eco-friendly and sustainable building development.

Winter Farmers Markets This Saturday!

There are a number of farmers markets taking place across the Philadelphia region this Saturday, January 22, and we wanted to make sure that you don’t miss a single opportunity to support your farmers and get yourself some local eggs, milk, meat and veg.

In Center City, make a plan to swing by either Rittenhouse Square or Fitler Square. The Rittenhouse market (18th and Walnut Streets) is open from 10 a.m. until 2 p.m. and features meat, eggs and produce from Rineer Family Farms, those fabulous mushrooms from Davidson Exotics and much more. Fitler Square (23rd and Pine Streets) is open from 9 a.m. to 1 p.m. and some of the offerings include (but are not limited to) eggs and meat from Natural Meadows Farm and fruits and vegetables from Two Gander Farm.

If you’re in West Philly, you won’t want to miss the Clark Park Farmers Market (43rd and Baltimore Ave.). Even in January, you’ll find between ten and twelve vendors lining up to sell you all manner of fruits, vegetables, meats, dairy and more. This market also draws a few food trucks, so come hungry. We recommend the breakfast taco from Honest Tom.

For those of you located in a more northerly direction, you’ve got a couple of choices. If you’re close to the Piazza at Schmidts (2nd and Poplar Streets), their market runs from 10 a.m. to 3 p.m. Closer to Kensington and Fishtown? Head over to Greensgrow (2503 E. Cumberland)! They’re offering their biweekly farm market and will be open from 10 a.m. until 2 p.m.

Live outside the city? We’ve got a couple of markets for you as well! Bryn Mawr residents can get their local food fix from 10 a.m. until 12 noon at the market in front of the Bryn Mawr train station. This market runs the fourth Saturday of the month, January through April, before resuming a weekly schedule in May. The Chestnut Hill Growers Market (Winston Road between Germantown Avenue and Mermaid Lane) is also open this Saturday, from 10 a.m. until 12:30 p.m. This market is open twice a month through April, to see the complete schedule click here (and scroll down to Saturday markets).
