Pete Demsher’s small, family-run West Chester, PA farm keeps a herd of more than 30 purebred hormone-free, antibiotic-free Nubian goats, and in the past several years, Demsher has developed a full line of goat’s-milk products. A steady diet of alfalfa and grass is the foundation for Shellbark Hollow’s high-quality milk.
Shellbark Hollow is known best for its impossibly creamy, wonderfully tangy artisan chèvre, packaged in the form of round “biscuits” that are available in plain, flavored and aged varieties. Other products include harder cheeses, sweet and savory cheese spreads, yogurt and yogurt cheese, ricotta, raw goat milk and kefir.
Shellbark Hollow has won the Best of Philly award for its chèvre, which is now served on cheese plates in discerning restaurants like White Dog Café, Jake’s, Talula’s Table and Southwark.
