Patches of Star Dairy

Happy, healthy goats make for superior milk and cheese

R. Kennedy for GPTMC

For two decades, Elly Houshour has raised the goats on her Nazareth farmland in a holistic manner with natural hay, organic mineral mix, sunflower seeds and non-chlorinated water.

Her all-natural products under the Patches of Star banner include raw goat’s milk; smooth, spreadable chèvre in three flavors (plain, lightly salted and honey); havarti; Greek-style halloumi (a cheese rarely produced domestically); queso blanc (a firm ricotta-type cheese available in plain, garlic-parsley and sun-dried tomato and basil flavors); and a creamy feta with sweet roasted peppers—all of which have helped her develop a cult following in Philadelphia and New York markets.

Hushour also sells yogurt, goat’s-milk gelato and goat meat. Patches of Star products are available at Headhouse Square Farmer’s Market.
