On Tuesday, March 1, Di Bruno Brothers will release “Rootmere,” a cheese developed in collaboration with Vermont’s family-owned Jasper Hill Farms. It is a marriage of Jasper Hill’s Winnimere cheese, a creamy cow’s milk cheese and Art in the Age’s ROOT liquor.
ROOT was first developed as a Native American remedy from the roots and herbs abundant in Pennsylvania. This recipe was passed down to settlers, modified over the centuries, and was recreated by Philadelphia’s Art of the Age of Mechanical Reproduction. Winnimere is washed in ROOT liquor to create “Rootmere” a uniquely earthy, nutty, and creamy cheese.
This washed rind “Rootmere” is a limited edition cheese. Make sure to get some while it lasts. Samples are available March 5 at the Di Bruno Brothers’ Italian Market store, March 6 at their Rittenhouse Square location, and April 9th at the Ardmore Farmers’ Market. It will be selling for $29.99 a pound and will be available for purchase at the tasting events and at the Di Bruno Brothers locations, while supplies last.
