
Salad:
1/3 pound baby arugula
3 beets, roasted and cut into slices
1/2 cup fresh goat cheese
1/2 red onion, finely sliced
1/2 cup almonds, toasted and chopped
Dressing:
1/3 cup balsamic vinegar
1/2 cup fruity olive oil
1/2 teaspoon salt
4-5 turns of a pepper grinder
Combine the salad ingredients in a large bowl.
Pour the dressing ingredients into a jar and shake to combine. Pour some of the dressing over the salad and use your hands to toss. Taste and adjust salt and pepper if necessary.
